I am a big breakfast food fan, so I decided to try out a couple breakfast options next!

I pressed the hashbrowns into greased muffin tins
While those baked, I made the scrambled eggs and shredded cheese ready to fill the baked hashbrowns:
They came out looking very delicious!
However, they don't seem to stay together very well. Not sure it is worth making into cups, probably just as tasty side by side. But, I would consider making these for an event, where it makes portions easy (but the same)
My preference would be for a breakfast casserole, similar idea, easier to make, gives people choice about how much they want.
However, in talking with a friend (who tried an liked these cups I made) she reminded me of one other benefit of these over breakfast casserole - significantly less baking time!
