Recipe #7: Slow Cooker Chicken Dinner

I picked out this recipe because I had some potato flakes to use up, and because I love a good crockpot dinner!

Thankfully my roommate had a large crockpot, the smaller one I usually use would not have been big enough for this recipe.

When making this recipe, I did make a substitute - russet potatoes for red potatoes (since I also had those to use up!)


Typical of crockpot meals, this one was very simple. Really just takes as long as it takes to chop up the potatoes and carrots.

I have made ones like this before, but never mixed two kinds of "cream of" soups, but I liked that - and the idea to mix in any spices / seasoning you are going to add when you mix the two together.

When I added the potato flakes I wish I had removed the chicken from the top before to help it mix in better and not break up the chicken so much.

While I did enjoy this, I personally like cream cheese chicken varieties a tad better.
