Recipe #8 - Potato Puffs

Circling back to cooking!

I decided to finally make the Potato Puffs from Taste of Home

Gathered all the ingredients:

{Confession: I didn't weight the potatoes, I bought a five pound bag and guesstimated which potato to leave out that was likely about a pound.}

Pealing and cubing took longer than I anticipated - but I was glad to have this stockpot that makes draining out the water a breeze!

And, I got to use the "power boil" feature on my stove!

One thing I want to get better at is knowing how to "multi-task" or at least better order of operations for making things. One thing I wish I had done this time was toast the sesame seeds while the potatoes were boiling instead of after draining the potatoes.

But, the potatoes mashed up very well adding in the butter, cheese and milk

Another thing I failed to do was read the whole recipe well enough before starting to make it - I did not realize I would need to chill the potatoes for about 2 hours. So, I didn't get them done before my dance practice, but I did have the time of dance practice to let them chill.

Once I returned home, I pulled out the chilled potatoes, an ice cream scoop (per a suggestion in the comments on the recipe) and rolled A LOT of potato puffs


It appears I didn't crush the cornflakes enough, or at least I think if I had made them smaller they would have stuck to the potatoes better (based on the fact that by the end when there were mostly crumbs and sesame seeds they coated more evenly)

A few things I want to note:

  • Makes A LOT, but would be easy to make a much smaller batch
  • Doesn't have enough cheese for my liking, so if I make them again, I'll add a lot more
  • Since I didn't crush the cornflakes enough, I'll go to the other end and really crush them (maybe even put them in the blender?)
  • Reheats well in an air fryer! about 5 min for 3 of them at 400 degrees
Here is one with a bite out of it from the first batch, pretty tasty!


I also followed the suggestion to freeze some, can't comment on how they do after being frozen, but I'm glad to not have to all of them right away!
