Recipe #12: Blintz Pancakes

This recipe was another make with a friend adventure!

And didn't have that many ingredients :)

Especially with the cottage cheese, it is a pretty lumpy batter:

So it kinda looks like there are already "bubbles" in the pancakes when they are put on the griddle. (that's how my dad taught me to know pancakes are ready to flip)

But we were able to tell well enough to have great looking, and tasting, pancakes:

Adding all the toppings made them look, and taste, even better!
