Second breakfast recipe - I followed the tip, make these on a Sunday night and have grab and go options for the week!
Two recipes in a row that had you make scrambled eggs and add them already made to the dish - I had never considered doing that before. Success - I wanted to follow actual recipes to expand my ideas and options for when I just throw things together, as I so often do :)

Since I made them {later than planned} Sunday night, I didn't take many pictures, but did snap one as I put the 1.5 dozen muffins in the oven:
I think when making this again (which I do plan to!) I would decrease, or even omit, the sugar. They are sweeter than I need. But, I do really like them. They also have similarities to breakfast casserole, but are much more easily portable.
My friend and her two kids tried some straight out of the fridge, not warmed up at all, and they were not bad that way (though I do prefer them heated up!) and I love that the recipe reminded me that these kinds of things freeze well. Since so often I am cooking for 1, being able to freeze and spread out dishes is really useful!
Monday morning I decided to do a side by side taste comparison of the Hashbrown Cups and these muffins - I do like them both, and am reconsidering my statement that I won't be making the hashbrown cups again...
